Obviously it doesn't take a rocket scientist to make avocado and egg on toast, so I've compiled some of the tips offered on Simple Green Moms to help with things like the actual selection of your avocado and how to quickly ripen your avocado - a neat little trick! Enjoy this fast and easy breakfast!

  • Eggs
  • Bread
  • Avocado
  • Lime Juice
  • Sea Salt
  • Black pepper

Not only is it fairly cheap to make avocado toast at home, but it is also super easy!  This breakfast only takes about 5 minutes and you will have a restaurant quality, picture perfect avocado toast ready to eat without the hefty price tag that trendy restaurants are charging!

Selecting the Right Avocado at the Store

You want to look for an avocado that is slightly soft when given a light squeeze - almost the same consistency of a ripe peach. However, grocery store avocados tend to be rock hard (a sign that they are not yet ripe), or they end up being completely soft (over ripe already). The trick is to buy the hard avocado, then all you have to do is wait!

Quickly Ripen Your Avocado

Those solid avocados will get ripe if you just give them a little time! But if you lack patience, speed up the process by putting the avocado in a paper bag with a banana, then fold the top of the bag a few times to seal it.

The science behind this is that the ethylene gas emitted from the banana and from the avocado will be trapped in the bag and cause it to ripen faster. You still have to wait a day or two, but it’s faster than waiting a full week to ripen them!

Preparing the Avocado & Egg on Toast

Now that you have your perfectly ripe avocado, you're ready to make your toast! Simply mash the avocado in a bowl with lime juice, sea salt and black pepper - and it's that easy; your delicious avocado spread is ready!  It’s almost like a super simple guacamole! If you want to add a little spice, throw in some red pepper flakes or Sriracha sauce too (now you’re getting restaurant grade food!).

The eggs and toast can be cooked completely to your preference. You can do a fried egg, a poached egg, even scrambled egg! And you can toast the bread as much as you'd like too - from a golden brown to a dark (almost burnt) flavour, depending on what your taste buds like.

Assembly is quite self explanatory, but just in case you were wondering, spread the avocado mix onto the toast and then just top it with your cooked eggs. And look at that, you will never pay outrageous restaurant prices for avocado toast again! You can make perfect, mouth watering, super trendy avocado toast right from your home.

Imagine all the variations of this recipe you could make too:

  • Avocado, bacon and egg
  • Cheesy avocado and egg
  • Tomato, avocado and egg
  • Avocado, egg and honey drizzle
  • ... the flavour combinations are endless!
